Telera Rolls

Telera Rolls

Telera Rolls – Soft and fluffy Mexican rolls. Telera rolls are a classic type of Mexican bread. These rolls are an important part of Mexican culinary culture and are often used as a base for torta, the popular Mexican sandwich. These breads are iconic for torta sandwiches, filled with everything from grilled meats and avocado to beans and salsa. You can also serve them as a side with soups and stews, or with butter, cheese, or jam for breakfast. Telera Rolls can be frozen and thawed when needed, without losing their softness.

Instructions

  1. Take 3 dl of the water and heat it to 37 degrees. Pour it into a small bowl and add the sugar and yeast. Mix together and let it rest for 10-15 minutes until the mixture is bubbly and frothy.
  2. Place the flour and the remaining water in a stand mixer. Add the oil and salt and mix for 2 minutes. Pour in the yeast starter and knead the dough for about 10 minutes.
  3. Cover and let it rise for about 1 hour.
  4. Turn the dough out onto a floured work surface and divide it into 12 equal pieces. Cover them with plastic wrap or a clean kitchen towel and let them rest for 15 minutes.
  5. Flour the work surface, take one dough ball and flatten it slightly with your hands to give it an oval shape. Then use a thin wooden spoon or a metal straw to create two deep grooves on top. Press almost all the way through, but do not cut through the dough. Transfer them to two baking sheets lined with parchment paper and sprinkle a little flour on top.
  6. Cover and let them rise for half an hour.
  7. Bake them in the middle of the oven at 200°C for about 15 minutes.
