Sugar-Free Lemon Panna Cotta

Ingredients
- 3 dl heavy cream
- 100 g Sugarish
- 60 g lemon juice
- finely grated zest of 1 lemon
- 1 tsp gelatin powder
Instructions
- Sprinkle the gelatin powder over about 2 tablespoons of cold water and let it bloom for 5–10 minutes.
- Heat the heavy cream, Sugarish, and lemon zest in a saucepan. The mixture should be warm but must not boil.
- Remove the saucepan from the heat.
- Stir in the lemon juice.
- Add the bloomed gelatin and stir until completely dissolved.
- Pour the mixture into serving glasses and refrigerate until the panna cotta has set.
Topping
- 2 dl heavy cream
- 1 tsp Sugarish
- Finely grated lemon zest
Whip the heavy cream with Sugarish until soft peaks form. Transfer the cream to a piping bag and pipe it elegantly over the chilled panna cotta. Garnish with finely grated lemon zest before serving.
