Strawberry mousse is a fresh, light, and summery dessert that is perfect for both everyday occasions and celebrations. The mousse is easy to make, requires few ingredients, and can be prepared well in advance of serving, making it perfect for impressing without stress.

Ingredients

  • 400 g fresh strawberries 
  • 75 g sugar (adjust to taste, depending on how sweet the berries are)
  • 1 tsp vanilla sugar 
  • 3 tsp gelatin powder 
  • 3 tbsp cold water (to soak the gelatin powder)
  • 2.5 dl heavy cream

Instructions

  • Blend the strawberries until smooth using an immersion blender or a regular blender.
  • Strain the mixture to remove seeds if you prefer an extra smooth mousse.
  • Stir in the sugar and vanilla sugar.
  • Sprinkle the gelatin powder over 3 tbsp of cold water in a small bowl.
  • Let it bloom for 5–10 minutes.
  • Gently warm the bloomed gelatin in the microwave or over a water bath until it is liquid (do not boil).
  • Stir 1–2 tbsp of the strawberry puree into the gelatin to equalize the temperature, then mix everything back into the remaining puree.
  • Whip the heavy cream to soft peaks (not too stiff).
  • Gently fold the strawberry mixture into the cream, a little at a time, until well combined.
  • Divide the mousse into serving glasses.
  • Chill for at least 2–3 hours, preferably overnight.
  • Garnish with a little whipped cream and strawberries.

Serve the strawberry mousse well chilled, ideally topped with a little whipped cream and fresh strawberries for an extra delicate finish. If you want a slight variation, you can also garnish with lemon balm, grated chocolate, or some crushed meringue. A lovely, airy dessert that tastes of summer!
