Silvia Cake (19 cm Springform)

Silvia cake is one of those cakes that proves that simplicity is often the best. A moist and soft cake base topped with a delicious, glossy vanilla glaze and a sprinkle of coconut, it just melts in your mouth.

This is an incredibly easy cake to make, with few ingredients and a result that tastes far more sophisticated than the effort would suggest. Perfect when you want to make something nice for coffee, for guests, or just to treat yourself to a little indulgence.

Ingredients

Cake Base

  • 2 eggs
  • 150 g sugar
  • 120 g all-purpose flour
  • 2 tsp baking powder
  • 1 dl cold water

Vanilla Glaze

  • 90 g butter
  • 90 g sugar
  • 1 egg yolk
  • 2 tsp vanilla sugar

Instructions

Cake Base

  1. Preheat the oven to 175 °C (top and bottom heat). Line a 19 cm springform pan with parchment paper.
  2. Whisk the eggs and sugar until light and fluffy.
  3. Combine the all-purpose flour and baking powder, and sift it into the egg mixture.
  4. Gently fold in the flour mixture.
  5. Finally, stir in the cold water.
  6. Pour the batter into the pan and bake in the middle of the oven for about 30-35 minutes, or until a cake tester comes out clean.
  7. Let the cake cool in the pan until it is lukewarm.

Vanilla Glaze

  1. Place the butter, sugar, egg yolk, and vanilla sugar in a small saucepan.
  2. Heat over low to medium heat while stirring constantly.
  3. Once the butter has melted, the sugar has dissolved, and the glaze is smooth and slightly thicker, remove the saucepan from the heat. It does not need to boil vigorously.

Assembly

  1. Spread the warm glaze evenly over the lukewarm cake.
  2. Immediately sprinkle with coconut or cake sprinkles.
  3. Allow the cake to cool completely before serving.

An easy cake that suits all occasions and is guaranteed to disappear quickly from the cake stand. Let it sit for a while before serving, so the flavors can develop properly.

This is a true classic worth keeping. Sometimes, it’s the simplest cakes that turn out to be the very best.
