Rolls with Wheat Gruel, Oats, Whole Grain, and Cottage Cheese

These rolls are incredibly juicy, soft, and delicious. Blending the cottage cheese until smooth gives an extra moist dough, while wheat gruel, oats, and whole grain flour add great flavor and a bit of texture. The rolls are perfect for breakfast, lunchboxes, or as a light evening meal, and they freeze well.

Ingredients

Gruel

  • 100 g wheat gruel
  • 2.5 dl water

Dough

  • 840 g all-purpose flour
  • 150 g finely ground whole grain flour
  • 50 g oats
  • 1 packet dry yeast
  • 1 tbsp sugar
  • 2 tsp salt
  • 2.5 dl water
  • 400 g cottage cheese
  • 1 egg
  • 0.5 dl neutral oil

For Topping

  • Some oats

Instructions

  1. Make the gruel: Bring 100 g wheat gruel to a boil with 2.5 dl water. Let it simmer for about 5 minutes. Remove the gruel from heat.
  2. Blend the cottage cheese: Blend the cottage cheese until smooth using an immersion blender or a regular blender.
  3. Combine the gruel: Add the blended cottage cheese, 2.5 dl water, egg, and oil to the gruel. Mix well. Allow the mixture to cool to lukewarm or near room temperature.
  4. Mix the dry ingredients: Place all-purpose flour, finely ground whole grain flour, oats, dry yeast, sugar, and salt in a stand mixer.
  5. Make the dough: Pour the gruel mixture over the dry ingredients and knead the dough well for about 15 minutes on low/medium speed. The dough should be soft and slightly sticky but should gather around the kneading hook. If the dough seems too stiff, you can add a little extra water, 1 tbsp at a time.
  6. First rise: Cover the bowl and let the dough rise for about 1 hour, or until it has roughly doubled in size.
  7. Shape the rolls: Turn the dough out onto a work surface. Divide it into 15 equal pieces and shape them into rolls.
  8. Second rise: Place the rolls on a baking sheet lined with parchment paper, approximately 42 × 29 cm. Cover and let them rise for about 30 minutes.
  9. Topping the rolls: Brush or spray the rolls lightly with water and sprinkle with oats.
  10. Bake: Bake in the middle of the oven at 225 °C for about 17-18 minutes, until the rolls are golden and cooked through.
  11. Cool: Let the rolls cool on a wire rack.

Allow the rolls to cool on a wire rack before slicing them. They are best enjoyed while still slightly warm, preferably with butter and your favorite spread. The rolls also freeze very well. Cool them completely, place them in freezer bags, and take out as many as you need. Thaw them on the kitchen counter, or warm them for a few minutes in the oven for that fresh-baked feeling.
