Ingredients
- 300 g water
- 1 tsp honey
- 1 packet dry yeast
- 500 g all-purpose flour
- 80 g finely ground whole grain flour
- 150 g Greek yogurt
- 1 tsp salt

Instructions
- Place all the dry ingredients in a stand mixer – reserve some of the all-purpose flour to adjust the dough as needed.
- Heat the water, yogurt, and honey in a saucepan until the mixture is lukewarm.
- Pour the lukewarm liquid over the dry ingredients and knead the dough for about 10 minutes.
- Cover and let the dough rise for about 1 hour, or until it has doubled in size.
- Divide the dough into 8 equal pieces and shape them into rolls. Place them on a baking sheet lined with parchment paper or in a small baking pan and sprinkle a little flour on top.
- Cover and let rise for an additional 30 minutes.
- Bake in the middle of the oven at 225°C for about 17 minutes, until the rolls are golden and cooked through.
