Ingredients

  • 850 g stone-ground, finely sifted wheat flour
  • 150 g stone-ground, finely milled whole grain flour
  • 1 tsp salt
  • 150 g sugar
  • 1 packet dry yeast
  • 6 dl water
  • 100 g room temperature butter

Instructions

  1. Place all the dry ingredients in a stand mixer. Reserve some of the flour for adjustments. Add lukewarm water and knead the dough for 10 minutes. Add the butter and knead for an additional 5 minutes.
  2. Cover and let the dough rise for 1 hour.
  3. Divide the dough into 10 equal pieces. Roll them into balls and place them with ample space on two baking sheets lined with parchment paper.
  4. Cover and let them rest for 20 minutes.
  5. Then flatten the buns and create a dimple in the center.
  6. Cover and let them rise for 30 minutes.
  7. Brush them with egg.
  8. Bake in the middle of the oven at 225°C for 12-14 minutes.
  9. Cool on a wire rack.
