Ingredients
- 850 g stone-ground, finely sifted wheat flour
- 150 g stone-ground, finely milled whole grain flour
- 1 tsp salt
- 150 g sugar
- 1 packet dry yeast
- 6 dl water
- 100 g room temperature butter

Instructions
- Place all the dry ingredients in a stand mixer. Reserve some of the flour for adjustments. Add lukewarm water and knead the dough for 10 minutes. Add the butter and knead for an additional 5 minutes.
- Cover and let the dough rise for 1 hour.
- Divide the dough into 10 equal pieces. Roll them into balls and place them with ample space on two baking sheets lined with parchment paper.
- Cover and let them rest for 20 minutes.
- Then flatten the buns and create a dimple in the center.
- Cover and let them rise for 30 minutes.
- Brush them with egg.
- Bake in the middle of the oven at 225°C for 12-14 minutes.
- Cool on a wire rack.
