Dough
• 250 g milk (lukewarm)
• 1 packet dry yeast
• 1 tbsp honey
• 40 g rapeseed oil
• 1 egg
• 500 g all-purpose flour
• 1 tsp salt
Topping
• A little milk (for brushing)
• Grated parmesan
Chicken Filling
• 600 g chicken thighs (cut into pieces)
• salt and pepper
• 1 tsp paprika powder
• 1 tsp onion powder
• ½ tsp garlic powder
• ½ tsp cayenne pepper
• ½ tsp turmeric
• 1 small red onion (finely chopped)
• 60 g pickles (finely chopped)
• 100 g sriracha

Instructions
1. Make the dough
- Add all the ingredients to a stand mixer.
- Knead for 10–15 minutes until you have a smooth and elastic dough.
- Cover and let rise for about 1 hour.
2. Shape the buns
- Divide the dough into 12 equal pieces and roll into buns.
- Lightly flatten them and place on a baking sheet lined with parchment paper.
- Cover and let proof for 30 minutes.
3. Bake the buns
- Brush with milk and sprinkle with grated parmesan.
- Bake in the middle of the oven at 200 °C for 13–14 minutes.
- Cool on a wire rack.
4. Make the chicken filling
- Sauté the chicken in a little oil along with all the spices.
- Transfer the chicken to a bowl.
- Add the finely chopped red onion, pickles, and sriracha.
- Mix well together.
5. Serving
- Slice the buns in half.
- Fill with salad and the spicy chicken mixture.
- Serve and enjoy!
