Ingredients

  • 75 g butter
  • 150 g all-purpose flour
  • 220 g sugar
  • 2 eggs
  • 1 lime, both juice and zest

    Cream Cheese Frosting
  • 150 g heavy cream
  • 75 g cream cheese, plain
  • 25 g powdered sugar

Instructions

  1. Melt the butter and let it cool slightly. 
  2. Whisk together the eggs and sugar, then mix in the lime juice, zest, and all-purpose flour. Stir in the melted butter. Combine until you have a smooth batter.
  3. Pour the batter into a springform pan (18 cm) lined with baking paper.
  4. Bake in the middle of the oven at 175℃ for about 20-22 minutes.
  5. Let it cool first on the counter and then in the refrigerator for at least 2 hours.

    Cream Cheese Frosting
    Whip everything together until you have a thick and smooth cream.
    Transfer the cake to a serving plate and spread the cream cheese frosting on top. Garnish with lime zest.
