This is an easy cake to make, but it impresses both in flavor and appearance. The soft cake gets a lovely freshness from lime, while the colorful tutti-frutti sprinkles add a playful touch and a little crunch.

Ingredients

  • 60 g butter
  • 75 g sugar
  • 1 egg
  • 80 g all-purpose flour
  • 1 tsp baking powder
  • 1 lime, juice and zest
  • 25 g heavy cream
  • 2 tbsp tutti-frutti (cake sprinkles)

Icing:

  • 15 g butter
  • 40 g powdered sugar
  • 1 tsp vanilla sugar
  • 120 g cream cheese
  • 2 tsp lime juice

Mix together the icing ingredients and spread it over the cooled cake. Garnish with grated lime zest.

Instructions

  • Melt the butter and let it cool slightly.
  • Whisk together the sugar and egg until light and fluffy.
  • Stir in the melted butter and mix well.
  • Sift together the all-purpose flour and baking powder, and fold it in.
  • Add the lime juice, grated lime zest, and heavy cream. Mix well.
  • Gently fold in the tutti-frutti (cake sprinkles).
  • Pour the batter into a parchment-lined springform pan (18 cm) and smooth the surface.
  • Bake the cake on the bottom rack at 175°C for about 25 minutes.
  • Let the cake cool in the pan before removing it.
