Ingredients
- 500 g all-purpose flour
- 50 g Sugarish
- 1 tsp cardamom
- 1 tsp salt
- 1 packet dry yeast
- 1 egg
- 3 dl milk (lukewarm)
- 50 g butter, room temperature
Filling
- 50 g Sugarish
- Finely grated zest of ½ lemon (about 1–2 tsp)
- A pinch of salt
- 70 g unsalted butter, room temperature
Lemon–Sugarish Topping
- 2 tbsp Sugarish
- Finely grated zest of ½ lemon
- Some lemon juice (for brushing)

Instructions
- Add all the dry ingredients to a stand mixer.
- Pour in the lukewarm milk and egg, and knead for about 10 minutes.
- Add the butter and continue kneading for about 5 minutes until the dough is smooth.
- Cover and let rise for about 1 hour.
- Transfer the dough to a floured surface and roll out into a rectangle.
- Spread the filling (see below) evenly over the dough.
- Cut into 9 equal pieces with a pizza cutter.
- Roll up into spirals and place in a small, parchment-lined baking dish.
- Cover and let rise again for about 30 minutes.
- Bake in the middle of the oven at 220 °C for 13–14 minutes.
Filling
- Mix together the butter, Sugarish, lemon zest, and salt until smooth.
- Spread the filling evenly over the rolled-out dough.
Lemon–Sugarish Topping
- Combine Sugarish and lemon zest in a bowl.
- Rub together with your fingers for 1–2 minutes until aromatic.
- When the rolls are freshly baked and warm, lightly brush with lemon juice.
- Sprinkle the topping over immediately.
