Ingredients

  • 200 g room temperature butter
  • 200 g sugar
  • 4 eggs
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 200 g all-purpose flour
  • 2 tsp baking powder
  • A pinch of salt
  • 50 g poppy seeds
  • 1 dl milk

Instructions

  1. Whisk the butter and sugar until light and fluffy in a mixing bowl.
  2. Add one egg at a time, whisking well after each addition.
  3. Stir in the lemon zest and lemon juice into the mixture.
  4. In another bowl, sift together the flour, baking powder, and salt. Add the poppy seeds to the flour and mix well.
  5. Gently fold the flour mixture into the butter mixture in batches, alternating with the milk until you have a smooth and even batter.
  6. Pour the batter into a round, lined or greased cake pan (20 cm) and smooth the top.
  7. Bake the cake at 180°C, in the middle of the oven for about 35 minutes.
  8. Let the cake cool slightly in the pan before removing it and placing it on a wire rack to cool completely.
  9. Once the cake is completely cool, mix together powdered sugar and water until it reaches a suitable thickness and pour it over the cake. Sprinkle with poppy seeds.
