Eggless Orange Muffins

These moist eggless orange muffins are easy to make and full of fresh orange flavor. Greek yogurt and canola oil keep the muffins soft and fluffy, while grated orange zest adds extra aroma. Perfect with a cup of coffee, in a lunchbox, or whenever you want something sweet and refreshing.
Ingredients
- 250 g all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 120 g canola oil
- 120 g orange juice (about 2 large oranges)
- 125 g plain Greek yogurt
- 200 g sugar
- 1 tbsp grated orange zest
- 1 tsp vanilla extract
Instructions
- Whisk together the orange juice, orange zest, canola oil, vanilla extract, yogurt, and sugar.
- Sift in the all-purpose flour, baking powder, and salt. Fold together with a spatula until you have a smooth batter.
- Divide the batter into the muffin cups, filling them about ¾ full.
- Bake in the middle of the oven at 180 °C for 22-25 minutes, or until a toothpick comes out clean.
- Cool the muffins on a wire rack.
Let the muffins cool slightly before serving, and enjoy them as they are or with a dusting of powdered sugar on top. They stay moist for several days if stored in an airtight container. Perfect when you're craving something simple, homemade, and flavorful.
