Eggless Orange Muffins

These orange muffins are soft, incredibly moist, and bursting with orange flavor. Easy to make, and even easier to eat up!

• 125 g Greek yogurt, plain
• 120 g rapeseed oil
• 120 g orange juice (about 2 large oranges)
• 1 tsp vanilla extract
• 200 g sugar
• 1 tbsp grated orange zest
• 250 g all-purpose flour
• 2 tsp baking powder
• 0.5 tsp salt

1. Whisk together the orange juice, orange zest, rapeseed oil, vanilla extract, yogurt, and sugar.

2. Sift in the all-purpose flour, baking powder, and salt. Fold together with a spatula until you have a smooth batter.

3. Divide the batter into the muffin cups, filling them about ¾ full.

4. Bake in the middle of the oven at 180 °C for 22-25 minutes, or until a toothpick comes out clean.

5. Cool the muffins on a wire rack.
