Double Hazelnut Cookies with Chocolate Filling

Double Hazelnut Cookies with Chocolate Filling

Small recipe. This makes 10 double cookies.

Ingredients

  • 100 g hazelnuts
  • 120 g powdered sugar
  • 2 egg whites
  • Chocolate filling
  • 75 g room temperature butter
  • 50 g powdered sugar
  • 1.5 tbsp cocoa powder
  • 1 tsp vanilla sugar
  • 1 egg yolk

Instructions

  1. Whisk the egg whites until stiff.
  2. Grind the nuts.
  3. Gently fold in the nut mixture and powdered sugar into the whipped egg whites.
  4. Transfer the mixture to a piping bag and pipe out 20 small cookies.
  5. Bake in the middle of the oven at 200°C for 6-8 minutes.
  6. Cool down.
  7. Mix together all the ingredients for the chocolate cream. Transfer it to a piping bag and pipe cream onto half of the cookies. Then take the other half of the cookies and place them on top.
