- 170 g butter
- 50 g sugar
- 180 g light syrup
- 6 dl milk
- 2 eggs
- 300 g stone-ground whole grain flour, finely milled
- 900 g stone-ground, finely sifted wheat flour
- 1 packet dry yeast
- 1 tsp salt

Instructions
- Combine milk, butter, syrup, and sugar in a saucepan and heat until the butter and syrup have melted. Allow the mixture to cool until lukewarm. Whisk in 2 eggs. Place the flour, yeast, and salt in a stand mixer and add the wet mixture. Knead the dough until it is smooth and elastic.
- Cover and let rise for 1 hour.
- Divide the dough into 18 pieces. Shape each piece into elongated buns and flatten them slightly. Place the buns on two baking sheets lined with parchment paper. Cut a notch at each end.
- Cover and let them proof for 30 minutes.
- Bake in the middle of the oven at 220°C for 10-12 minutes.
- When the Christmas goats are done baking, brush them with room temperature butter for a shiny surface and extra moisture.
