Ingredients

  • 900 g finely sifted, stone-ground wheat flour
  • 1.5 dl sugar
  • 2 tsp cardamom
  • 3 tbsp cinnamon
  • 1 tbsp cloves
  • 1 packet dry yeast
  • 125 g butter
  • 5 dl milk
  • 1 egg
  • 100 g raisins
  • 100 g candied citrus peel
  • 100 g dried apricots
  • For brushing and decoration
  • 1 egg
  • 1 tbsp milk
  • 30 g hazelnuts
  • 2 tbsp pearl sugar

Instructions

  1. Place all the dry ingredients in a stand mixer.
  2. Melt the butter and mix it with the milk. Let it cool to lukewarm. Pour it into the stand mixer along with the dry ingredients.
  3. Add 1 egg and knead for 10 minutes.
  4. At the very end of kneading, add the raisins, candied citrus peel, and dried apricots.
  5. Cover and let the dough rise for one hour.
  6. Turn the dough out onto a work surface and divide it into 18 equal pieces.
  7. Shape into buns and place them on two baking sheets lined with parchment paper.
  8. Cover and let them proof for 30 minutes.
  9. Whisk together the egg and milk to brush the buns.
  10. Sprinkle with pearl sugar and finely chopped hazelnuts.
  11. Bake the buns in the middle of the oven at 210°C for about 15 minutes.
