Ingredients

  • 950 g finely sifted, stone-ground wheat flour
  • 150 g sugar
  • 2 tsp cardamom
  • 1 packet dry yeast
  • 150 g butter
  • 6.5 dl milk
  • 150 g raisins
  • 100 g candied peel

Instructions

  1. Place all the dry ingredients in a stand mixer.
  2. Melt the butter and mix it with the milk. Allow the mixture to cool to lukewarm. Then pour it into the mixing bowl with the dry ingredients.
  3. Knead for 10 minutes.
  4. Add the raisins and candied peel towards the end of the kneading.
  5. Cover and let the dough rise for 1 hour.
  6. Transfer the dough to a work surface and divide it into 2 equal pieces. Shape them into loaves and place them in two lined or greased loaf pans (1.5l).
  7. Cover them and let them rise for 30 minutes.
  8. Whisk together an egg and 1 tbsp milk and brush the loaves.
  9. Bake at 175°C on the second lowest rack for 40-50 minutes.
