  • 2 large eggs
  • 50 g sugar
  • 130 g dark chocolate
  • 2 tbsp strong coffee (cooled)
  • 1.5 dl heavy cream

Instructions

  1. Separate the eggs, placing the yolks in a large bowl and the whites in another bowl. Set the egg whites aside.
  2. Add the sugar to the egg yolks and whisk together until light and fluffy. You can use a hand whisk or an electric mixer for this.
  3. Melt the chocolate over a water bath or in the microwave until smooth and lump-free. Allow it to cool slightly before proceeding.
  4. Add the melted chocolate to the egg yolk mixture and stir well to combine.
  5. Add the cooled coffee to the chocolate and egg yolk mixture. Gently stir until everything is well mixed.
  6. In a separate bowl, whip the heavy cream until soft peaks form. This will add extra creaminess to the mousse.
  7. Take one-third of the whipped egg whites and gently fold it into the chocolate mixture. This will help lighten the mousse's texture.
  8. Then, add the whipped cream to the chocolate mixture and gently fold until everything is well combined.
  9. Finally, add the remaining whipped egg whites and gently fold until everything is well combined. Be careful not to overmix, as this can cause the mousse to lose its lightness.
  10. Divide the chocolate mousse into serving bowls or glasses and refrigerate for at least 2 hours, or until set and firm.
  11. Serve the chocolate mousse chilled, preferably topped with a dollop of whipped cream or fresh berries for extra flavor and decoration.
