Chocolate Mousse (4 servings)

Some desserts feel extra nostalgic, and milk chocolate mousse is definitely one of them. This version is silky smooth, airy, and full of mild chocolate flavor, making it perfect for both weekend treats and festive occasions. It's easy to make but looks impressive when served in small glasses topped with a bit of grated chocolate or fresh berries. A dessert that is always well-received, no matter the occasion.

Instructions
- Chop the chocolate into small pieces and melt it over a water bath together with 0.5 dl of the heavy cream. Stir regularly until the chocolate is completely melted, then set aside to cool slightly.
- Whip the remaining heavy cream to soft peaks.
- Separate the eggs and stir in one egg yolk at a time into the melted chocolate. Make sure the chocolate isn't too hot, so the eggs don't curdle.
- Gently fold the whipped cream into the chocolate mixture until smooth.
- Whip the egg whites until stiff and gently fold them in at the end. This will give the mousse an airy texture.
- Divide the chocolate mousse into serving glasses and let them chill in the refrigerator for at least 2 hours before serving.
- Top with a bit of grated chocolate.
