- 150 grams chocolate
- 3 egg whites
- 50 g sugar
- 2.5 dl heavy cream
- 1 tsp vanilla sugar
- A pinch of salt

Instructions
- Melt the chocolate in a double boiler or in the microwave until smooth and lump-free. Set aside and let it cool slightly.
- Whisk the egg whites and a pinch of salt until soft peaks form. Gradually add the sugar while continuing to whisk until stiff peaks form. The egg white mixture should be glossy and firm.
- In another bowl, whisk the heavy cream and vanilla sugar until it becomes fluffy.
- Carefully pour the melted chocolate over the whipped cream. Use a spatula to fold the chocolate into the cream.
- Then, gently fold the whipped egg white mixture into the chocolate-cream mixture using a spatula until everything is well combined.
- Divide the chocolate mousse into serving bowls or glasses.
- Refrigerate the chocolate mousse for at least 2 hours, or until it is set and firm.
- Serve the chocolate mousse cold, preferably topped with some whipped cream or fresh berries for extra flavor and decoration.
