Ingredients

  • 70 g all-purpose flour
  • 20 g cocoa powder
  • 3 tsp instant coffee (espresso)
  • 1 tsp baking powder
  • ⅛ tsp salt
  • 60 g room temperature butter
  • 130 g brown sugar
  • 1 egg, room temperature
  • 100 g melted dark chocolate
  • 1 tbsp milk

Instructions

  1. Whisk together the butter and brown sugar until light and fluffy.
  2. Whisk in the egg.
  3. Add the melted chocolate.
  4. Sift in the flour, baking powder, cocoa, instant coffee, and salt, and fold together.
  5. Add 1 tbsp of milk and mix in.
  6. Place the dough in the freezer for 45 minutes.
  7. Roll small balls and coat them first in sugar and then in powdered sugar.
  8. Place them on two baking sheets lined with parchment paper.
  9. Bake the cookies at 175°C for 9–12 minutes, until they look puffed and cracked, and the edges start to set, but the center is still soft. Do not bake too long!
  10. Let the cookies cool before transferring them to a wire rack to cool completely.
  11. Storage: Store the cookies in an airtight container for up to 3 days at room temperature.
