Ingredients

  • 60 g butter
  • 180 g milk
  • 1 packet dry yeast
  • 35 g sugar
  • 300 g all-purpose flour
  • 6 g salt
  • Filling
  • 125 g soft butter
  • 125 g brown sugar + 1-2 tbsp for sprinkling on top at the end.

Instructions

  1. Place all the dry ingredients in a stand mixer.
  2. Melt the butter in a saucepan over low heat. Add the milk and check that the temperature of the butter/milk mixture is lukewarm.
  3. Pour the mixture into the mixing bowl with the dry ingredients. Knead the dough until it is smooth, elastic, and pulls away from the sides of the bowl.
  4. Cover and let the dough rise for 30 minutes.
  5. Press the dough into a parchment-lined baking tray (25 x 35 cm). The dough is very thin, and it may seem too thin - but after rising and baking, it will be just the right amount of dough.
  6. Mix the soft butter and brown sugar together and spread it over the dough. Sprinkle a little brown sugar on top at the end.
  7. Cover and let it proof for about 1 hour.
  8. Bake at 200°C, in the middle of the oven for about 12-15 minutes, until it is well caramelized. Watch it closely towards the end of the baking time. The filling should be golden, but not too dark. Let the brunsviger cool in the baking tray. Serve as is, or decorate with candy and/or cream.
