Ingredients

  • 920 g stone-ground, finely sifted wheat flour
  • 2 tsp sugar
  • 1 packet dry yeast
  • 3 dl water
  • 3 dl milk
  • 1 egg
  • 1 tsp salt
  • 50 g room temperature butter

Instructions

  1. Place all the dry ingredients in a stand mixer.
  2. Heat the milk and water until lukewarm and pour it into the stand mixer along with the dry ingredients.
  3. Add the egg and knead for 10 minutes.
  4. Add the butter and continue kneading for another 5-10 minutes.
  5. Cover and let the dough rise for 1-2 hours.
  6. Divide the dough into two equal parts, and then divide each of these into three equal pieces. Roll each piece into approximately 40 cm long ropes. Braid three of the dough ropes together to form a nice braid and place it on a baking sheet lined with parchment paper. Pinch the ends together well. Repeat with the remaining three dough ropes. Make sure not to place the loaves too close to each other.
  7. Cover and let rise for another 30 minutes.
  8. Brush with egg and water and sprinkle with poppy seeds.
  9. Bake in the middle of the oven at 190°C for 35-40 minutes.
