Ingredients

  • 200 g stone-ground whole grain flour, finely milled
  • 800 g stone-ground, sifted wheat flour
  • 1 packet dry yeast
  • 2 tsp salt
  • 0.5 dl rapeseed oil
  • 1 tsp syrup
  • 250 g grated apple
  • 6 dl milk

Instructions

  1. Place all the dry ingredients in a stand mixer.
  2. Warm the milk until lukewarm and pour it into the stand mixer along with the oil, grated apple, and syrup.
  3. Knead for 10 minutes.
  4. Cover and let the dough rise for 1 hour.
  5. Turn the dough out onto a floured surface and divide it into 16 pieces, shape into rolls, and place them on a baking sheet lined with parchment paper.
  6. Sprinkle a little flour on top.
  7. Cover and let them rise for 30 minutes.
  8. Bake on the middle rack at 225 °C for about 15 minutes.
