Almond Base with Chocolate Topping

This delicious almond base combines the wonderful flavor of nuts with a rich and creamy chocolate topping. It has a moist texture, a mild almond taste, and a lovely layer of chocolate that makes the cake extra festive. This is a simple yet elegant cake that is perfect for coffee visits, birthdays, or whenever you want to serve something a little extra special.
Ingredients
Almond Base
- 5 egg whites
- 180 g sugar
- 1.5 tsp vanilla sugar
- 250 g almonds
Chocolate Topping
- 150 g milk chocolate
- 1.5 dl heavy cream
- Chopped Daim (optional, for garnish)
Instructions
Almond Base
- Preheat the oven to 180 °C (top and bottom heat).
- Finely chop the almonds in a mini chopper or food processor.
- Mix the chopped almonds with the egg whites, sugar, and vanilla sugar. The egg whites should not be whipped stiff.
- Line a springform pan (about 19 cm) with parchment paper, and evenly distribute the batter in the pan.
- Bake the cake in the middle of the oven for 45–50 minutes.
- Let the cake cool completely in the pan.
Chocolate Topping
- Finely chop the milk chocolate and place it in a small bowl.
- Heat the heavy cream in a small saucepan until it just reaches boiling point.
- Pour the hot cream over the chocolate and let it sit for about 1 minute. Then stir until you have a smooth and glossy chocolate cream.
- Let the chocolate cream cool slightly if it is very runny.
- Spread the chocolate cream evenly over the cooled almond base.
- Sprinkle with chopped Daim, if desired.
- Place the cake in the refrigerator for at least 3 hours, preferably overnight, so that the chocolate topping sets.
- Remove the cake from the pan, place it on a serving platter, and serve with fresh berries if desired.
Once the cake has chilled and the chocolate topping has set, it is ready to be enjoyed. It can be garnished with fresh berries for a nice contrast to the sweet chocolate. The almond base keeps well in the refrigerator and can be made a day in advance, making it a practical and flavorful cake for both small and large occasions.
