- 4 egg whites
- 180 g sugar
- 1/4 tsp salt
- 2 tsp cornstarch
Vanilla Cream
- 2 dl heavy cream
- 1 tsp vanilla sugar
- 2 egg yolks
- 50 g sugar
- 15 g cornstarch

Instructions
Preheat the oven to 125 degrees Celsius, conventional heat.
Whisk the egg whites on medium speed until soft peaks begin to form. Increase the speed and gradually add the salt and sugar, a little at a time. Continue whisking while gradually adding more sugar. Once all the sugar is added, keep whisking until the meringue is completely stiff and free of sugar grains. Gently fold in the cornstarch at the end.
Transfer the mixture to a piping bag and pipe small nests onto a baking sheet lined with parchment paper.
Reduce the temperature to 100 degrees Celsius and bake the pavlovas in the middle of the oven for about 1.5 hours.
Turn off the oven and let the pavlovas sit in the oven until completely cool. Ideally, leave them until the next day.
Vanilla Cream
Combine all ingredients in a saucepan. Bring to a boil over medium heat while stirring constantly. Stir well at the bottom to prevent burning. Once the cream comes to a boil, let it boil for 30-40 seconds, still stirring constantly.
Pour it into a bowl. Cover immediately with plastic wrap, pressing it down onto the vanilla cream, and refrigerate to cool.
Just before serving, fill the pavlovas with vanilla cream and whipped heavy cream, fresh berries, or whatever you desire.
