There are several factors that can affect the outcome when baking a cake. Therefore, it is important to follow the recipe as closely as possible, both in terms of ingredients, method, cake pan, and baking.
Follow the method in the recipe. Pay attention to the words in the recipe. If it says “whisk”, the ingredients should be whisked. If it says “fold in” or “mix in”, you should mix gently, not whisk further. Once the flour is added, it is especially important not to overmix. Too much and vigorous mixing can develop the gluten in the flour and result in a cake that is denser and less airy. At the same time, you should, of course, mix well enough to ensure the ingredients are evenly distributed. Always follow the mixing method and time specified in the recipe.
The cake pan also matters a lot. If you switch to a different size or type of cake pan, both the height, appearance, baking time, and texture of the cake can change. A smaller pan results in a thicker layer of batter and may therefore require a longer baking time, while a larger pan produces a flatter cake that often bakes faster. The material of the pan, such as metal, glass, or ceramic, can also affect how the cake bakes and how much it browns. Therefore, it is not certain that the cake will turn out exactly the same if you use a different pan than the one specified in the recipe. It may also be necessary to adjust the baking time and, in some cases, the temperature, depending on the pan and material you are using.
The ingredients are there for a reason. If you substitute ingredients, the final result may also be different. Small changes in, for example, the amount of flour, sugar, fat, or liquid can affect both the flavor, moisture, structure, and how airy the cake becomes. Therefore, you should be cautious about substituting ingredients if you want the same result as the original recipe. So if your cake doesn’t turn out quite as expected, it might be wise to ask yourself: Did I follow the recipe exactly? Did I use the correct cake pan? Did I mix the batter correctly? And did I use the same ingredients?
